Chocolate Almond Frozen Banana Pops

What is not to love about chocolate covered bananas? I personally can't think of anything more perfect on a hot, cold, muggy or rainy day ( no seasonal discrimination here) than a frozen banana covered in dark chocolate, EXCEPT adding almond butter to the banana before dipping it. Why haven't I tried this before?!

Ripe bananas slathered with cinnamon & vanilla scented almond butter, dipped in dark chocolate and frozen into a gluten free, kid and adult friendly treat.

Chocolate Almond Frozen Banana Pops
serves 4
4 bananas
1/2 cup almond butter
1/2 tsp vanilla extract
1/4 tsp cinnamon
12 oz dark chocolate chunks
2 tbl coconut oil
4 wooden popsicle sticks

Place a popsicle stick into each banana.
Combine the almond butter, vanilla and cinnmon.
Spread 2 tablespoons of almond butter in the curve of each banana.
Combine the chocolate and coconut milk and melt until smooth.
Dip* each banana in the chocolate and set on a parchment or seran wrap lined plate and place in the freezer until firm.
Enjoy!

*I find the easiest way to dip a banana in chocolate is to melt the chocolate and oil in a tall microwave safe glass. Then dip each banana in the glass, tilting the swirling the cup to cover the entire banana.
