Roasted chickpeas are a wonderful snack and serve as a different and unique finger food for people to snack on at parties instead of the usual chex-mix type treat. Try these out and adjust the spices to your palate or add new ones to create different flavor profiles.
Simple canned chickpeas tossed in olive oil, pure maple syrup, ancho chile and cumin and roasted until smokey and crunchy.
Roasted Chickpeas
2-15 oz cans chickpeas, drained and rinsed
2 tbl extra virgin olive oil
1 tbl maple syrup
1 tsp cumin
1 tsp paprika
1 tsp salt
1/2 tsp cinnamon
1/2 tsp ground coriander
1/2 tsp ancho chile powder
Preheat the oven to 400.
Toss the beans with all of the remaining ingredients and spread out in an even layer on a baking sheet.
Bake for 30-40 minutes until browned and crunchy.
