Gluten Free Cookie Dough Bites

These raw cookie dough bites are a great, healthier alternative to cookie dough if the craving strikes. With the help of a food processor, these bites come together in just minutes and are wonderfully customizable. Use cashews, pistachios or pecans as well. This batter is meant to be eaten just as cookie dough and will not work as baked cookies, but I don't have that kind of time anyways!

Almonds and walnuts blended into a thick nut butter with oats, cinnamon, chocolate chips and a touch of maple syrup.

GF Cookie Dough Bites
15 small cookie dough balls
1/2 cup toasted almonds
1/2 cup toasted walnuts
3 tbl maple syrup
1 tsp vanilla extract
1/2 tsp cinnamon
1/8 tsp salt
2/3 cup gluten free rolled oats
1/2 cup semi-sweet chocolate chips

Combine the almonds, walnuts, maple syrup, vanilla, cinnamon and salt in a food processor and blend into the consistency of a nut butter, this might take up to 5 minutes.
Add the oats and chocolate chips and blend into a cohesive dough.
Scoop into small balls and enjoy! Chill to store.

  1. These are so delicious .. I've made two batches in the past week. I love how the chocolate chips get a bit melty when added to the freshly toasted nuts.
