Chipotle Potato Salad, Applesauce Barbecue Seitan

I'm always trying to think of potato salad ideas that don't have a strong vinegar taste thanks to my husband who has a child-like gag reflex to anything with vinegar in it. This recipe has great flavor, spicy from the chipotle peppers and sweet from the orange marmalade. I can only assume it will taste even better tomorrow for lunch once the flavors have been allow to meld more. The red onion and cilantro provide a bright, fresh flavor that is welcomed in the warmer months.

Sweet homemade barbecue sauce sweetened with applesauce and spiced with cinnamon, ginger, cumin and paprika. This crockpot dish takes less than five minutes to prepare then you sit and let the crock pot do all the work. Serve it with a fresh potato salad great for picnics and backyard barbecues.

Chipotle Potato Salad
2 large russet potatoes, large dice
2 heaping tbl orange marmalade
1/2 small red onion, minced
2 chipotle peppers in adobo, minced
3 tbl extra virgin olive oil
1 tbl rice wine vinegar
juice of 1 large orange
1/4 cup fresh chopped cilantro
1/4 tsp black pepper
1/2 tsp sea salt

Combine the diced potato with salted water in a large pot. Bring to a boil and cook until tender. Drain and set aside.
Combine the remaining ingredients and toss with the hot potatoes. Taste and season.

Applesauce Barbecue Seitan
1 small sweet onion, medium dice
1 lb seitan, medium chunks
1 1/2 cup unsweetened apple sauce
1/2 cup ketchup
1/2 cup organic light brown sugar
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp cinnamon
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp dry mustard
1/4 tsp ground ginger

Combine all of the ingredients in a crock pot. Place on high and cook for 4 hours.
