Superfood Soup

I actually had no intention to post this soup, mostly because I just wanted to make a quick lunch using leftover stuff from my fridge. But it ended up tasting so great that I thought; why not post it?
The challenge? Brussel sprouts, kale, green cabbage, scallions, cilantro and lima beans.
That is what I had to work with. So both things can be surmised, it's going to be green and it's going to be REALLY healthy..but will it taste good?
YES!
In some odd way it tasted exactly like broccoli cheese soup, but there is no broccoli or cheese in it. Totally bizarre, but really delicious.



Superfood Soup
3 tbl extra virgin olive oil
2 scallions, minced, green and whites
8 brussel sprouts, ends trimmed, sliced thin
2 tsp red pepper flakes
1/2 tsp garlic powder
1 tsp sea salt
1/2 tsp pepper
1/4 cup nutritional yeast
1 cup thinly sliced green cabbage
2 cups frozen lima beans
1/4 cup packed chopped cilantro
1/4 cup packed chopped kale

Heat the oil in a large soup pot and saute the scallions over medium heat for 4 minutes. Add the brussel sprouts, red pepper flakes, garlic powder, salt, pepper and nutritional yeast. Stir and saute for 7 minutes. Add the cabbage, lima beans and 2 cups of water. Bring to a simmer and cook for 12 minutes.
Transfer to a blender and add the kale and cilantro. Blend until pureed. If it's too thick for your taste (or blender) add some more water. Taste and season.

  1. That sounds SOOOOO good! Brussel sprouts a little hard to find here in my part of Italy, but all the rest is readily on hand. Thanks! Am going to try it.
