Chai Spice Oatmeal with Date Compote

Why cook oatmeal in water or plan milk? Why not add tons of flavor and really kick things up a notch? Why would anyone ever go back to those gross oatmeal packets once they know the limitless possibilities of flavoring oatmeal yourself? Why are you still reading this and not eating this instead?
Some people like their oatmeal thick, some like it thin. I like mine thick and creamy. If you don't share the same affinity for oatmeal as I do, add more almond milk to thin it out.

Chai Spice Oatmeal
2 cups coconut milk
2  cups almond milk
3 tbl turbinado sugar
3 bags chai tea ( I use Celestial Seasonings Sweet Coconut Thai Chai)
2 cinnamon sticks
1/2" piece fresh ginger
1 tbl orange zest
1 tsp cinnamon
1 tsp cardamom
1/8 tsp salt
2 cup old fashioned rolled oats

Combine the milks, sugar, tea bags, cinnamon sticks, ginger, cinnamon, cardamom and salt. Bring to a simmer, turn off the heat and cover. Steep for 10 minutes. Keep the tea bags in, and add the oatmeal. Cook over medium heat for 15 minutes until thick and creamy, stirring  every couple minutes so the bottom does not scorch. Squeeze out any remaining flavor in the tea bags and remove the ginger and cinnamon pieces.

Date Compote
1/3 cup dark agave
2 tbl turbinado sugar
1 tsp orange zest
15 neglect dates, roughly chopped
1 cup of water

Combine all of the ingredients in bring to a simmer. Cook down for 10-15 minutes until thick and sticky, stirring occasionally to prevent the bottom from burning.

  1. Yep I'm in the thick oatmeal camp myself. And looks like you can't beat that date topping.
