Baked Butter Beans

Giant, creamy butter beans with your favorite marinara sauce, garlic and spices baked with crunchy breadcrumbs until golden and toasty. Serve with a side of greens for a quick meal in less than 30 minutes.

Baked Butter Beans
serves 4
2-15oz cans butter beans, drained and rinsed
1-25 oz jar marinara sauce
3 cloves garlic, minced
1 tbl dried basil
2 tsp dried oregano
1/2 tsp red pepper flakes
salt and pepper, to taste
1 cup breadcrumbs
2 tbl extra virgin olive oil
2 tbl roughly chopped fresh parsley

Preheat the oven to 425.
Combine the beans, sauce, garlic, basil, oregano and red pepper flakes. Season with salt and pepper. Pour into a 9" casserole dish and top with breadcrumbs. Drizzle olive oil over the top and bake for 20 minutes until golden brown. Place under the broiler if you want for a good crunch on top.
Sprinkle the top with fresh parsley and serve.
