Spiced Waffles with Peach Compote

Peaches are the best this time of year so any excuse to eat them for every meal is ok with me.
These waffles are a cinch to make and come together in the time it takes for your waffle iron to heat up.

Crisp on the outside and fluffy on the inside, these waffles are spiced with ginger, allspice, cinnamon and topped with a fresh peach compote.

Spiced Waffles
makes 2
2 cups all-purpose flour
1 cup whole wheat pastry flour
1/3 cup organic light brown sugar
2 tsp cinnamon
1 tsp baking powder
1 tsp ground ginger
1/2 tsp allspice
1/4 tsp salt
2 1/2 cup vanilla hemp milk
2 tbl canola oil

Preheat a waffle iron.
Combine the flours, sugar, cinnamon, baking powder, ginger, allspice and salt. Add the milk and oil and whisk to combine.
Immediately pour half of the batter into the iron and cook until golden brown and fluffy.

Peach Compote
1 tbl vegan butter
2 yellow peaches, skin on, small dice
2 tbl organic light brown sugar
2 tbl peach or apricot preserves
pinch salt

Melt the butter in a saute pan and add the diced peaches and brown sugar. Saute for 5 minutes and add the preserves and salt. Cook over medium-low heat for 5 more minutes until the compote is thick and syrupy.
