Fresh Corn, Red Onion & Basil Pizza

Sometimes pizza doesn't have to have cheese...or sauce! Sometimes it can just be lightly drizzled with olive oil and topped with fresh ingredients like corn and basil and taste even better than a traditional pie. Small slices would be great as a passed appetizer or small meal.

Fresh Corn, Red Onion & Basil Pizza
serves 3
1 ball fresh pizza dough, room temperature
1 cup corn kernels
2 tbl thinly sliced red onion
2 tbl thinly sliced red cabbage
2 garlic cloves, minced
1 celery stalk, thinly sliced
1/4 cup vegan herb & chive cream cheese (optional)
2 tbl extra virgin olive oil
salt and pepper, to taste
2 tbl chopped fresh basil
1 tbl chopped fresh dill

Preheat the oven to 450.
Roll out the pizza dough to a 1/4" thickness and place on a greased baking sheet. Top with corn, onion, cabbage, garlic, celery and cream cheese if using. Drizzle the top olive oil and season with salt and pepper.
Bake for 17 minutes or until the bottom is golden brown and cooked through.
Garnish with basil and dill.
