Broccoli Fritters with Roasted Garlic Tahini

Broccoli, creamy gigante beans, cheese and old bay give these fritters a crab cake taste and feel. Nothing wrong with that!

Broccoli Fritters
1 head broccoli florets
3 roasted garlic cloves*
10 oz gigante beans (or cannelini beans)
1/4 cup nutritional yeast
1/4 cup vegan cheddar cheese
1 tsp old bay seasoning
salt and pepper, to taste
1 cup panko breadcrumbs
oil for frying

Process the broccoli in a food processor until it is finely minced. Add the garlic, beans, nut yeast, cheese, old bay, salt and pepper. Blend until the mixture combines and can be formed into patties.
Form into medium sized patties and coat in panko.
Pan fry until golden brown.
These patties are pretty delicate and soft, so be gentle! You can also chill them for a couple hours to firm up more for easier handling.

Roasted Garlic Tahini
1/4 cup tahini
8 small roasted garlic cloves*
1 tbl fresh lemon juice
1 tsp extra virgin olive oil
salt and pepper, to taste

Combine all of the ingredients in a blender and blend until smooth.

*I bypassed roasting garlic by purchasing a tiny amount from the olive bar at my grocery store. Anything to keep my kitchen cool when it's so hot outside.
