Tropical Trio Popsicles

The only time these take is time to wait anxiously while each layer semi-freezes before adding the next flavor.
The amount of sugar you use can be based off your taste and the ripeness of your fruit.  Add or subtract to your liking.

Three layers of bright, fresh flavor in one popsicle treat. Chocolate banana, coconut and pineapple.

Tropical Trio Popsicles
makes 10
2 ripe bananas
2-6 tbl organic cane sugar, divided
1 tbl cocoa powder
8 oz coconut milk
8 oz pineapple juice
10 popsicle sticks

Use a food processor to blend the bananas, 2 tbl of sugar and cocoa together. Divide into ten popsicle molds. Freeze for 1 hour.
Combine the coconut milk and 2 tbl of sugar. Pour on top of the banana layer. Freeze for 1 hour.
Pour the pineapple juice on top of the coconut layer and freeze one hour.
My popsicle molds have a lid that holds the popsicle stick in place even when the mixture is not frozen. If yours doesn't, freeze the pineapple layer for one more hour then add the sticks. 
Freeze until completely solid.
