Crunchy Peanut Slaw

My husband is gone for the night so I tried to think of something I like to eat but don't normally eat when he is around. Coleslaw came to mind but I didn't want to eat something thick and laden with mayonnaise so I decided to throw together a thai-style slaw that is full of flavor and plenty of crunch.

Sesame, coconut and ginger dressing tossed with purple and napa cabbage, edamame, red peppers, peanuts and plenty of other crisp vegetables.

Crunchy Peanut Slaw
1 cup thinly sliced purple cabbage
1 cup thinly sliced napa cabbage
1 cup chopped fresh cilantro
1 bunch scallions, green parts only, roughly chopped
1 cup cooked edamame
1/2 cup snow peas
1/4 cup carrot matchsticks
1/4 cup thinly sliced red bell peppers
1 1/2 cup roasted, salted peanuts

Combine all of the ingredients except the peanuts and toss with dressing. Let sit for at least an hour before serving. The longer it sits the better it tastes! Garnish with peanuts.

Dressing
1/2 cup melted coconut oil
3 tbl rice wine vinegar
1 tbl agave
2 tsp toasted sesame oil
1 tsp soy sauce
1 tsp lime juice
1 tsp finely grated fresh ginger
salt and pepper

Combine all of the ingredients and toss with slaw.
