Chickpea Salad Sandwich

This chickpea salad is reminiscent of tuna salad sandwiches I used to eat as a kid. It's fast to put together and great for lunches. Additionally, it tastes great just over lettuce and topped with a little vegan cheddar.

Chickpeas, crunchy celery, red onion, dill relish, toasted walnuts and a touch of mustard sandwiched between toasted seed bread with cucumbers and spring greens.

Chickpea Salad
serves 2
1-15oz can chickpeas, drained and rinsed
1/2 celery stalk, minced
2 tbl roughly chopped, toasted walnuts
2 tbl vegan mayonnaise
1 1/2 tbl dill relish
1 tbl dijon mustard
2 tsp grated red onion
1/2 tsp garlic powder
1/4 tsp paprika
1/4 tsp salt
1/4 tsp pepper

Mash the chickpeas into a chunky consistency. Add the remaining ingredients and stir to combine. Taste and season with more salt and pepper.

Sandwich Assembly
2 tbl vegan mayonnaise
1/2 cup baby spring mix lettuce
8 thin slices of cucumber
4 slices whole grain bread, toasted

Spread a thin layer of mayonnaise on each piece of bread and top with lettuce, cucumber and chickpea salad.
