Double Chocolate Cherry Cookies

Chewy dark chocolate cookies enrobed around chunks of white chocolate chips and chewy dried cherries.

Double Chocolate Cherry Cookies
makes 15 big or 30 small
1 1/2 cups vegan butter, softened
1 cup organic cane sugar
3/4 cup cocoa
1/2 cup organic light brown sugar
1/4 cup water
1 tbl ener-g egg replacer
1 tsp vanilla extract
1 1/4 cup all-purpose flour
3/4 tsp baking soda
1/2 tsp sea salt
1 cup dried cherries
1 cup vegan white chocolate chips

Preheat the oven to 350. Line two baking sheets and grease.
Cream together the butter, sugar and cocoa until fluffy. Add the water, egg replacer and vanilla. Beat for 2-3 minutes. Add the flour, baking soda and salt. Mix to combine. Add the cherries and white chocolate chips.
Scoop out cookies 2" apart on the baking sheets. Do not flatten down. Bake for 12-15 minutes until baked but not fully. Allow to cool. The cookies will continue to bake on the sheet while they are cooling.
