Apple Maple Fritters!

Hot, crispy fritters filled with apples and spices rolled in a maple glaze.

Apple Fritters
makes 8 small fritters
2 small macintosh apples (a little over 1 cup of small diced pieces)
1 tsp cinnamon
1 cup cake flour
2 tbl organic cane sugar, divided
3/4 tsp baking powder
1/4 tsp salt
1/2 banana, mashed
1/2 cup oat milk
4 tsp canola oil, plus more for frying
1 tbl zested orange peel
1 tbl orange juice
1 tsp vanilla

Maple Glaze
1 cup powdered sugar
1 tsp cinnamon
2 tbl maple syrup
water

Toss the apples with 1 tbl of sugar and cinnamon. Let sit while you prepare the rest of the batter.
Heat up a pot of oil to 350.
Combine the cake flour, 1 tbl sugar, baking powder and salt.
In another bowl combine the mashed banana, oat milk, 4 tsp oil, orange peel and zest and vanilla.
Add the dry to the wet and whisk to combine. Fold in the apples.
Once the oil is at the right temperature, use an ice cream scoop to drop balls of batter into the oil. Fry for 5-6 minutes until the center is fully cooked.
Combine all of the glaze ingredients, adding water to thin it out.
Toss into the glaze while still hot and coat.
