Raspberry S'mores with Homemade Graham Crackers

Who says you need to be outside to have s'mores? I certainly enjoy them more in the privacy of my own air conditioned home! And when fresh graham crackers and fruity flavored chocolate are in the mix, being around a fire is the last thing I'm thinking about. There is no poking a stick through these bad boys.

Homemade graham crackers, slabs of raspberry chocolate, fresh raspberries and vegan marshmallows. Pretty sure it doesn't get any better!

Graham Crackers
1 cup earth balance vegan butter, room temperature
3/4 cup, packed organic dark brown sugar
2 tbl amber agave
1 1/2 cup ap flour
1 cup graham flour
1/2 cup raw wheat germ
2 tsp cinnamon
1 tsp baking soda
1/2 tsp sea salt
2 tbl organic cane sugar
1 tsp cinnamon
parchment paper

Beat the butter, brown sugar and agave together until light and fluffy.
Combine all of the remaining ingredients in a bowl except cane sugar and cinnamon. Add to the butter in two stages.
Continue to beat with a paddle attachment until the dough comes together.
Divide the dough into three. Roll out each ball of dough between two pieces of parchment into a rectangle. Trim the edges with a knife to form a perfectly straight shape.
Score the dough into 3" strips, be carefully not to cut fully through the dough. This way they will be able to cook as one but break off easily.
With the remaining scraps of dough, form a fourth rectangle and repeat.
Chill dough in the freezer for 20 minutes, meanwhile, preheat your oven to 350.
Prick each graham cracker with a fork several times and sprinkle with cinnamon/sugar.
Bake for 10 minutes, turning once after 5. Let cool for 5 minutes on the tray then remove and cool on a rack. Once cool, break apart.

S'mores
1-lb 58% chocolate, in chunks
2 tbl raspberry jam
fresh raspberries
graham crackers
vegan marshamallows, like Dandies

Combine the chocolate and jam in a bowl. Pop in the microwave for only 30 seconds. Stir the warmed chocolate until all of the remaining chunks are gone and the mixture is smooth.
Set a piece of parchment on a tray. Pour the chocolate over the parchment and quickly spread out thin. Use a knife to score strips so once the chocolate has firmed up, it will break apart easily.
After a couple minutes once the chocolate is tacky but not totally firm, press a few fresh raspberries into each strip. Chill in the fridge until hard, about 15-20 minutes.

To melt the marshmallows, assemble a s'more without a top cracker and place it under the broiler for just a few seconds until browned and melty.
