Fig & Cherry Granola
This granola is great on top of yogurt, fruit or just eaten by the handful. Chewy, crispy and slightly sweet, this snack is a great mid-afternoon pick me up.
Chewy oats, pecans, dried figs and cherries, walnuts and toasted sunflower seeds round out this nutrient-rich granola.
Fig & Cherry Granola
3 cups old fashioned rolled oats
3/4 cups sliced almonds, toasted
1/2 cup sunflower seeds, toasted
1/2 cup walnuts, toasted & roughly chopped
2 tsp cinnamon
1/2 tsp sea salt
2 tsp canola oil
zest and juice of one orange
1/2 cup water
1/2 cup organic light brown sugar
1 cup dried cherries
1 cup roughly chopped dried figs
Preheat the oven to 300.
Combine the oats, almonds, sunflower seeds, walnuts, cinnamon and salt in a bowl and toss to combine.
In a small pot, combine the oil, orange zest and juice, water and brown sugar. Bring to a boil and boil for 2 minutes. Pour over oats and toss to combine.
Spread out on a baking sheet in a single layer and bake for 40-45 minutes, tossing every 15 minutes until crunchy and golden brown. Let cool and add the dried cherries and figs.
