Chewy Cherry Oatmeal Cookies



Every now and then you just need a good chewy cookie loaded with dried cherries, coconut and old fashioned oats.

Chewy Cherry Oatmeal Cookies
1/2c earth balance vegan butter, softened
1 cup organic brown sugar
3/4 cup organic sugar
1 tbl ener-g egg replacer
1/4 cup water
1/2 tsp coconut extract
1 tsp vanilla extract
1 1/2 cups all purpose flour
1/2 tsp cinnamon
3 cups old fashioned rolled oats
1 cup dried cherries
1/2 cup shredded coconut

Preheat oven to 350. Line 2 baking sheets with foil or parchment paper and spray with canola spray.
In a large bowl, combine the butter with both sugars and cream until light and fluffy. Add the egg replacer, water and both extracts and combine. Add the flour and cinnamon, combine. Add the oats, cherries and shredded coconut and mix until just combined.
Use an ice cream scoop or a spoon to shape large balls of cookie dough. Place 6 cookies on each sheet, pressing the cookie down slightly.
Bake for 10 minutes, turning the trays in the oven half way through. Remove from the hot tray and let cool on a baking rack a couple minutes out of the oven.
