Summer Berry Parfait
During the summer I love to get fresh berries into as many things as possible. They taste awesome and are nice and cheap. Sometimes though I don't eat them fast enough and they start to get a little soft. That's when I quickly turn them into a compote, so I can still get great, fresh flavor out of them and not waste a bite!
The great part about parfaits are they are totally customizable. Use whatever flavor non-dairy yogurt you want, whatever berries you want in your compote and change up the nuts in the granola for a different flavor.
Strawberry yogurt, homemade nutty granola and berry compote brimming with fresh blackberries and blueberries.
Granola
1 1/2c old fashioned oats
1/4c each, walnuts, almonds,pecans
1/4c maple syrup
pinch of salt and cinnamon
Preheat the oven to 300 degrees. Grease a baking sheet.
In a medium bowl, toss all ingredients and spread out in a single layer and bake until golden brown. For about 30 minutes, stirring every 10 minutes.
Berry Compote
1c blackberries
1/2c blueberries
1/4c maple syrup
pinch of salt
In a small sauce pan, combine all ingredients and bring to a boil. Reduce to a simmer and cook down until berries have broken down but still have a chunky texture. Let cool and refrigerate to cool completely and firm back up.
