One time saving tip I recommend is to make the seitan one day, then cook it another. I think you can even double it and freeze. As well as adjust the seasoning depending on what taste you're going for... I used to simmer mine much longer, so I thought this would taste undone...but I actually enjoyed the more tender texture. It's definitely a bit of a time-consuming recipe, but I definitely recommend it. I ate mine with mushroom gravy that I'd already had and was trying to use up and still delicious!
